Amino Acids Testing in Food

Quantification of Amino Acids

Amino acids occur in feed, food and beverages either as free amino acids or bound as building blocks of protein. The analysis of amino acids can include a number of steps, including hydrolysis to release bound amino acids, derivatization, separation of individual amino acids, detection and quantification. Quantitation of amino acids released by hydrolysis is an important measure of nutritional value. Free amino acids can also be useful metabolic indicators for monitoring and optimizing processes, such as fermentation.

Waters offers a number of manual and automated solutions for amino acid testing using pre-column derivatization, ensuring amino acids can be easily analyzed, enabling laboratories to:

−Ensure products meet label claims for nutritional composition

−Confirm products meet manufacturing specifications
